Chicken Fajitas
This is another go-to staple recipe in our home! This recipe is an easy prep ahead meal with multiple cooking options to fit your needs while still offering the same delicious flavor, regardless of how its prepared. This recipe is straight from my mom’s kitchen and was my regular birthday meal request growing up! And the best part, if you have left overs, they can be used to make my Chicken quesadillas for a second meal option for the week!
Fajita Ingredients
- 2 pounds of chicken breastÂ
- 3 Bell peppers
- 2 yellow onionsÂ
- 1/2 cup of olive oil
- 1/2 cup of orange juiceÂ
- 1/4 cup A1 sauceÂ
- 2 packs McCormicks fajita seasoningÂ
Toppings:
- Sour cream
- Shredded Mexican cheese
- Tortillas (Flour or gluten free)
- Hot sauce
- Guacamole
Instructions:
Slice chicken breast into 1/2 inch slivers.
Add olive oil, orange juice, A1 and fajita seasoning to a gallon ziplock bag. Add Chicken to zip lock bag and marinate 4-6 hours.
Slice peppers and onions. Set aside in a bowl.
Grill Style Instruction:
Preheat your grill to 400 degrees. I place a grill basket or foil onto the grill so the chicken and veggies don’t fall through the grates. Pour fajita ingredients into your grill basket, being sure to stir chicken and veggies occasionally until cooked to perfection.
Remove from grill and get to building you fajita!!
Skillet Style Cooking Instructions
Heat large skillet over medium heat with olive oil. Sauté peppers and onion until tender-crisp, about 10 – 13 minutes, stirring occasionally. Set aside.Â
Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil, then cook chicken in two batches until cooked through on the inside and lightly charred on the outside, about 2-3 minutes per side. Remove from skillet and set aside on a plate.
Fill your favorite tortilla shell with the chicken, onions, and peppers, and top with your dressings of choice!Â
Sheet Pan Style Cooking
Preheat oven to 375 degrees F.
Pour all of the fajita ingredients on a large sheet pan and cook for 35 minutes being careful to stir every 10 minutes.
Once chicken and veggies are cooked, remove from oven and build your fajita with your favorite toppings!
