Caprese Salad
Since planting our garden, we have an abundancce of cherry tomatoes and basil every summer. I love cherry tomatoes and this recipe ensures I have a yummy mid-afternoon snack or the perfect side dish to bring to cookouts whille utilized my garden harvest.Â
Ingredients:
- 16 oz fresh mozzarella cheese
- 10 Cherry Tomatoes
- Balsamic vinegar
- Olive oil
- Basil sliced
- Salt
- Pepper
Instructions:
Half or slice you cherry tomatoes.
Chop mozzarella into 1/2 inch cubes.
Start by spreading chopped tomatoes on a serving platter. Scatter pieces of mozzarella over the tomatoes, then sprinkle the basil leaves on top. Arrange everything so you can see each element clearly.
Season with salt and pepper, drizzle with olive oil and 2 Tbls balsamic vinegar.
