Brazilian Cheesy Rolls
These deliciously chewy, cheesy rolls made their way into my recipe box after a trip to a Brazilian steak house years ago. My husband eats a gluten-free diet and when we learned that there was a gluten free bread option at a restaurant for him, of course I had to figure out how to recreate it. Brazilian cheese bread has a base of tapioca flour (making it gluten-free), and this helps to create that light and airy texture that is necessary for Brazilian cheese bread. This bread is simple, delicious and very easy to make. I have enjoyed testing out different type of cheeses (like parmesan and asiago) and spices (like rosemary and garlic) to jazz up this recipe! Ingredients:

1 eggÂ

1/4 cup olive oil

2/3 cup milk

1 1/2 cup tapioca flour

1/2 cup shredded cheddar cheeseÂ

1/2 tsp salt
Instructions:
1. Preheat oven to 400 degrees.
2. Combine all ingredients to a blender and blend together until smooth.
3. Grease a muffin tin with olive oil, and pour mixture until tins are 3/4 of the way full.
4. Bake 20 minutes.
**The rolls will be hard when they come out of the oven but soften as they cool. Recipe makes 12 rolls.
