My husband is the ultimate Waffle House enthusiast. He’s the type of guy who can expertly dissect the perfect balance of crispy hash browns and cheesy goodness that makes a breakfast bowl just right. Whether it’s the nostalgia of late-night road trip diner stops, or simply the unbeatable satisfaction of a griddle-cooked breakfast, he’s all about it. This Griddle-Cooked Waffle House Style Breakfast Bowl is his dream come true—bringing that classic diner taste right into your home. Perfect for mornings when only a hearty, no-frills, waffle-house inspired breakfast will do!

Ingredients:

  •  2 eggs
  • 2 pieces of bacon
  • 1 1/2 cups hash browns (frozen)
  • 1/4 yellow onion, diced
  • 2 slices American cheese

Instructions:

  • Preheat your griddle to medium-high heat (around 375°F).
  • Place the bacon strips directly on the hot griddle. Cook until crispy, turning as needed, about 4-5 minutes. Once done, remove the bacon and place it on a paper towel to drain. Crumble the bacon into bite-sized pieces.
  • In the bacon drippings left on the griddle, add the diced onions. Cook until they become translucent, about 2-3 minutes.
  • Spread the hash browns over the griddle, mixing them with the onions. Flatten them out with a spatula to ensure even cooking. Cook until golden brown and crispy, about 5-7 minutes per side.
  • While the hash browns cook, create a small area on the griddle to scramble the eggs.
  • Crack the eggs directly onto the griddle and scramble them with a spatula until cooked through, about 2-3 minutes. You can season them with a little salt and pepper if you like.
  • Once everything is cooked, move the hash browns into a pile on the griddle and top them with the scrambled eggs.
  • Sprinkle the crumbled bacon on top.
  • Finally, lay the slices of American cheese over the hot ingredients. Let the cheese melt over the eggs and hash browns.
  • Carefully slide the assembled breakfast bowl off the griddle and into a serving dish.
  • Serve immediately while everything is hot and melty.

This griddle method brings out a deliciously crisp texture in the hash browns and gives everything that classic diner flavor!
