Garlic Parmesan Chicken Skewers

Ingredients:
- 2 lbs chicken breast thinly sliced
- 2 tbsp olive oil2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Garlic Parmesan Butter Sauce:
- 1 stick butter
- 8-10 cloves garlic, minced
- 1/2 cup parmesan, grated
- 1 tbsp hot sauce (more if desired)
- 2 teaspoons red pepper flakes
- 1/3 cup fresh parsley, minced
Instructions:
1. Prep and Skewer Chicken: Soak wooden skewers in water for at least 30 minutes. Mix chicken seasonings and set aside.
2. Cut chicken into thin pieces, about ½ inch thick, and toss with olive oil and spices.
3. Skewer the chicken tightly.
4. Make the Garlic Parmesan Butter Sauce: In a microwave-safe bowl, heat butter and garlic until partially melted. Add red pepper flakes, hot sauce, parsley, and parmesan. Whisk until combined. (I always make extra butter sauce for serving with the chicken as a dip.)
5. Cook skewers on the grill at 400 degrees for 5 minutes. Flip, baste with sauce, and cook for an additional 2 minutes. Flip again, baste, and cook for 5-6 minutes or until the internal temperature reaches 165 degrees F.
6. Remove from the grill, add to your favorite plate and top with parmesan cheese and extra Butter Sauce and enjoy!
