Chicken Potato Ranch Casserole
This casserole is the definition of comfort food for me! I came up with this recipe during the pandemic shut down when I really started to dive into baking and cooking to keep my mind and hands busy. I first made this recipe on Easter of 2020, and we ate the whole thing in one night!! Next time you are looking to make and all in one dish, this is it!!!
Ingredients:
- 1 pound shredded chickenÂ
- 4 Red potatoes diced Â
- 1/2 yellow onion dicedÂ
- 8 ounces of cream cheeseÂ
- 1/2 cup of sour creamÂ
- 1 cup of ranch dressing
- 1/2 lb of cooked bacon choppedÂ
- 8 ounces of sharp cheddar shreddedÂ
- 4 green onions, choppedÂ
Instructions:
Preheat oven to 425 degrees F.Â
Dice potatoes, onions, and green onions.
Cook chicken over medium high heat in a frying pan, shred and set aside.Â
Chop and cook bacon in a frying pan over medium high heat.
Set aside.Â
Mix cream cheese, sour cream, and ranch in medium sized bowl.Â
Add two spoonfuls of cream cheese mixture to diced potatoes and onions and mix in the baking dish.Â
Bake until the potatoes are soft and cand be pierced with a fork.
Mix chicken and cream cheese mixture and shredded cheese in a large bowl.
Add in bacon but leave a little bit to top the dish.
Mix the chicken mixture into your potatoes.Â
Bake for 15 more minutes top with the rest of bacon and green onions.Â
*** if you would like, you can add more cheese to the top of the dish if you desire.Â
